Our extensive environmental sustainability program is a priority initiative for the company.
Supporting Local Farmers, Artisans Suppliers, and Distributors:
By supporting local businesses Dupar & Company is able to support the local economy while decreasing its carbon footprint. Please see below for a full list of local suppliers.
Certified Organics:
The suppliers Dupar & Co. sources for organic products include: Willie Green’s Organic Produce (Monroe), Full Circle Farms (Fall City), King’s Produce (Okanogan), Theo Chocolates, Sleepy Monk Coffee, among others.
Peak Season:
We strive to purchase all produce during peak season to lessen the environmental impact in our community. By buying fresh, organic and local ingredients we are not only supporting local businesses, we are also extending the environmental chain of custody from the farm directly to the table.
Sustainable:
We are doing our best to only purchase seafood that has been determined “eco-friendly” by the Environmental Defense Fund.

A Question of Wellness:
We use no preservatives, chemicals or trans fats in our cooking. We make our own fresh sausages, breads, pastries, cakes, cookies, crackers, dressings, and sauces. We cook with cold pressed olive oil, butter, or flaxseed oil and fry with 100 percent peanut oil.
It’s More Than Just The Food:
Our environmental sustainability program extends far beyond the food. Below is an overview of how we are taking a greener path:
- Biodegradable “to-go” packaging for our guests.
- With the support of PSE, switching out our lighting in the kitchen & walk-in refrigerators to consume two-thirds less energy a month.
- With the support of Waste Management, composting our kitchen waste.
- Saving our fryer oil for bio-diesel production.
- Using earth-friendly dishwasher chemicals that use natural enzymes for breaking down grease and dirt.
- Continuing education for our culinary team on the health and eco-impact of our menu choices.
- Educating our catering clientele about eco-friendly events and eco-chic weddings.
- All staff is committed to not use disposable products for ourselves.
- Cellophane bags that are actually “cello” thus, plant based, and biodegradable.
- In the office, we now use recycled paper for menus, contracts and all interoffice hard-copy communication. Also, all of our printing is now double-sided.
- Saving water by using oil-cloth table coverings in the restaurant to avoid washing linens.
- All employees are committed to not using any disposable products for ourselves.
- We have the ultimate goal of discontinuing the Lisa Dupar Catering water bottles. When catering demands we still use plastic water bottles, we have chosen to support breast cancer research and purchase Athena bottled water for our catering customers.
