Another suggestion for your Super Bowl watching this weekend: our very own Pimento Cheese Dip. We have served this Pomegranate Bistro classic at the restaurant and POMBAR on and off for years and at events that we cater. I am often asked for the recipe and with the big game this weekend, it seemed like the perfect time to share it!
Lisa’s Pimento Cheese Dip
½ lb. extra sharp white cheddar cheese – grated
½ lb. extra sharp aged orange cheddar- grated
2 cloves of freshly peeled garlic – chopped
7-ounces drained & finely chopped pimentos
¼ teaspoon cayenne pepper
¼ teaspoon freshly ground black pepper
1/3 cup mayonnaise
1 Tbsp. Tapatío Hot Sauce
Place all ingredients in a food processor and pulse just long enough to roughly chop and blend. Store in the refrigerator in little mason jars, but set out for 20 to 30 minutes before serving to soften up the dip. Serve with your favorite pretzel chips.
