Thai Hibiscus Simple Syrup

Yields about 25 cocktails
  • 2 cups - Organic cane sugar
  • 2 cups - Water
  • ½ cup - Peeled & sliced fresh ginger
  • 1 qt - Thai hibiscus petals (just the waxy petals, not the heart of the flower)
  1. Place sugar, water, ginger and hibiscus in sauce pan over high heat and let boil for one minute.
  2. Remove from heat to let steep for 20 minutes.
  3. Strain out ginger and hibiscus.
  4. Let syrup cool.
