Pomegranate Sizzles with Hot New Summer Menu 50 items on menu, some back by request, others totally new, including Chipotle Shrimp Sopes with guacamole and lime crema, and Grilled Pomegranate Glazed Pork Chops with ‘hot from the oven’ potato mashers
REDMOND, Wash. – June 15, 2006 – Thought you had to run off to Seattle to enjoy quality food? Not anymore. Redmond’s chef-owned and operated neighborhood bistro, Pomegranate—favored for its Pacific Northwest inspired creations, southern tastes, family-oriented Sunday brunches, firebread entrees and cooking classes—has become the premier dining spot on the Eastside.
Starting today, co-owners Lisa Dupar and Jonathan Zimmer will serve dishes from their new summer menu, which melds new fares and old favorites including a variety of large and small plates. Dishes include Dungeness Crab and Basil Gazpacho with avocado salsa, Tomato and Sweet Onion Pie with roasted yellow pepper sauce, and Greek Salad with summer cukes, tomatoes, kalamata olives, montailler feta and oregano mint olive oil.
Some of the main items will include White Truffle Fettuccine with shaved pecorino, Seared Scallops with apple cider calvados sauce, crispy carrots and ginger; and Rare Tuna Tataki on sea veggie salad, sesame rice cake, truffled ponzu and wasabi avocado sauce.
Pomegranate’s wood burning oven is a fan favorite, with firebread entrees and appetizers that include toppings such as Tequila Gulf Shrimp with roasted garlic, red jalapenos and cilantro oil, and Sliced Roasted Steak on spinach with horseradish cream and crispy fried onion, Thyme Mustard Roasted Chicken with greens and sliced cheddar, and Grilled Salmon with lemon caper aioli and greens.
The restaurant’s summer menu will also feature cool selections of gourmet salads including Pom Nicoise with olive oil-packed Italian tuna, tomatoes, red potatoes, green beans, romaine, hard-boiled eggs and fresh olives.
Beat the summer heat with Pomegranate’s new Ice Crystal Clear Chocolate Martini with chocolate vodka, crème de cocoa and superfine chocolate powder; Hot and Spicy Straw-Basil Lemonade with Ketel One, jalapeno and red pepper-infused vodka, strawberries, basil and fresh lemonade, and Triple Berry Cosmo with Cointreau, lime squeeze, tangerine syrup and berry-infused vodka.
To top it all off and soothe the inner sweet tooth, restaurant-goers can choose from a Muscato d'Asti
Float with blackberry ice, dulce de leche bread pudding, cajeta and spiced whipped cream, Caramelized Banana and Toasted Coconut Cream Pie, and Berries drizzled with Pomegranate syrup topped with burnt marshmallow.
Along with the new summer menu come changes in the bistro’s décor. Modifications include newly designed teal-colored service aprons and decorative teal-colored table top accessories.

Just in the nick of time for college, this class will give college-bound freshmen a chance to learn how to prepare foods not traditionally found in the university cafeteria. Learn how to eat like a gourmet chef within the limitations of a dorm room base camp. Give the microwave a break and go “Beyond Top Ramen” and “Cups of Noodles.”
